Moist and Gooey Chocolate Cake

Description

This classic chocolate cake is defined by its incredibly moist, dense crumb and a rich, fudge-like frosting. The technique of blooming cocoa powder in warm water releases deeper chocolate notes, while the addition of brown sugar provides a subtle caramel undertone. Perfect for those who prefer a decadent, "gooey" texture rather than a light, airy sponge.

Instructions

  1. Preheat your oven to 180°C and grease a standard springform pan.
  2. Melt 175 g of 🧈 butter in a saucepan over low heat (about 100°C), then pour into a large mixing bowl; keep the saucepan for the cocoa mixture.
  3. Add the 🍯 brown sugar to the bowl and whisk until well combined.
  4. Incorporate the 🥛 milk into the mixture.
  5. Add the 🥚 eggs one at a time, whisking thoroughly after each addition to ensure the batter emulsifies properly and does not separate.
  6. Fold in the 🌾 flour, 🥄 baking powder, 🧂 salt, and 🥄 vanilla sugar; whisk vigorously to ensure all flour pockets are fully integrated into the batter.
  7. In the reserved saucepan, combine 250 ml water and 🍫 cocoa powder over low heat (about 100°C), stirring until smooth; it does not need to boil.
  8. Gradually pour the warm cocoa liquid into the cake batter while whisking continuously until the mixture is uniform and smooth.
  9. Pour the batter into the prepared springform pan and bake for 35–50 minutes.
  10. After 25 minutes of baking, when the surface has set slightly, carefully prick the surface with a fork to release trapped steam, which prevents the top from cracking.
  11. Test for doneness by inserting a skewer; if it comes out clean with no raw batter, the cake is ready.
  12. While the cake bakes, combine 150 g room-temperature 🧈 butter, 🥄 icing sugar, 🍫 cocoa powder, and 🥄 vanilla sugar in a bowl and beat until creamy.
  13. Once baked, let the cake cool completely—first at room temperature covered with a cloth, then in the refrigerator if you are short on time—before spreading with the frosting.
